to sauté until the onions, garlic, and apples have caramelized and
are golden brown. Set the pan aside.

. In a clean sauté pan, fry the bacon until crispy. Transfer it to a plate
lined with a paper towel and set it aside.

. Spread the remaining 1 tablespoon (15 ml) olive oil on the dough
and sprinkle the pie evenly with the onion-apple mixture. Gently
crush the bacon slices and sprinkle them over the top; coat
everything evenly with the cheeses. Transfer the pie to the baking
stone and bake it for 20 minutes, or until the cheese is melted and
the crust is golden brown. Sprinkle with salt and pepper to taste.
