Bavarian Calzones

                MAKES 2

                                                          . But when she broke
from her food strictures, the woman was magnificent. The all-time
gastronomic gut bomb was the day we sought sustenance after a
five-hour shopping jag in Munich. She spotted a large beer hall and
dragged me in. She ordered Camembert and bread. No big whoop,

                right?
What the waiter brought, however, pleased my Chuck E. Cheese–
infused American tummy to no end. The Camembert was an entire
saucer-sized round, breaded and deep fried to a golden brown. It
was hot, molten, and gooey, which immediately rectified the fact that
my mother had ordered a fancy French cheese. The bread was
crusty and plentiful, and the grub came with a large dish of chunky

                preserves. The combination was spectacular.
For my calzones, I riff on our culinary adventure and add a few
morsels like poached chicken and a little aioli to bring succulence to
the proceedings. Accompany this with a lovely glass of German
pilsner and give a toast to all the cool moms out there.
