sauté until the onion and garlic are very soft and just caramelized.
Add the orange slices and sauté for 1 minute more.

. Spread the remaining 1 tablespoon (15 ml) olive oil over the dough
with the back of a spoon or your hands. Sprinkle the dough with the
onion/garlic mixture, then pick out the orange slices so you can
distribute them evenly atop the onions and garlic.

. Drape the prosciutto across the dough and sprinkle the cheeses
evenly over all. Use the peel to transfer the pie to the baking stone
and bake for 20 minutes, or until the cheese is melted and the crust
is golden brown. Sprinkle with salt and pepper to taste.
