MINI STRAWBERRY TRIFLES

Who says trifles have to be layered in large glass bowls and feed a crowd? These
mini dessert trifles are very English in both taste and appearance. I remember
when living in England that we would wait for the first strawberries of the
season and serve them with whipped cream, vanilla custard, and cake.
Those flavors come together in these little do-ahead “cupcakes,” and they are
ready to be served when berries are at their best and your hectic schedule is at its
worst!
MAKES 8 TRIFLES (2½ INCHES EACH)
PREPARATION TIME: 20 MINUTES
ASSEMBLY TIME: 2 TO 3 MINUTES
1 package (3.4 ounces) instant vanilla pudding mix
2 cups cold milk
1 teaspoon pure vanilla extract
½ cup heavy (whipping) cream
