Instant vanilla pudding mix is a good time-saver, but really needs doctoring
because it is so bland. At the very least, I add 1 teaspoon of pure vanilla
extract or a pinch of grated nutmeg. If I have more time and prepare the
cook-and-serve vanilla pudding from the box, I’ll add a couple of
tablespoons of butter as well, to make it taste richer.
I used Sara Lee pound cake in this trifle. Leftover scraps make a nice
dessert-in-a-bowl with a scoop of ice cream or can be turned into cake
crumbs, handy for the bottoms and tops of cheesecakes. Of course, scraps
go down easily, accompanied by a cup of hot tea.
