CREAMY LEMON FROSTING

Pale yellow in color and vibrantly lemon in taste, this is a nice springtime
frosting on yellow cupcakes, or just the right touch for Fresh Pear and
Gingerbread Cupcakes (page 59) in the fall. Because the gingerbread recipe
makes just fourteen cupcakes, the yield for this recipe is smaller than the others
in this book. See “the Cupcake Doctor says” for adapting it for use with larger
recipes.
MAKES 1½ CUPS, ENOUGH TO FROST 14 CUPCAKES (2½-
INCH SIZE)

3 tablespoons butter, at room temperature
3 ounces cream cheese, at room temperature
1½ to 2 cups confectioners’ sugar, sifted
1 teaspoon grated lemon zest
