MARMALADE BUTTERCREAM FROSTING

If there were frostings just for adults, this might be one. But I know if I say that,
some child with a sophisticated palate will tell me how much he or she loves it.
So I’ll just say that this is a bright, fluffy buttercream with deep, pungent flavor
that anyone will enjoy. It is less sweet and more buttery than the other
buttercreams in this book. The pieces of orange rind in the marmalade give it
texture and interest. It’s nice on Orange Marmalade Ricotta Cupcakes (page 70),
spice cupcakes, or any plain cupcakes with a pound cake-like texture.
MAKES 2½ CUPS, ENOUGH TO FROST 24 CUPCAKES (2½-
INCH SIZE)
PREPARATION TIME: 5 MINUTES
8 tablespoons (1 stick) butter, at room temperature
2½ cups confectioners’ sugar, sifted
2 to 3 tablespoons fresh or commercial orange juice
1 heaping tablespoon orange marmalade
