Chicken Diablo

                 4                     skinless boneless chicken breast halves
                 6                     tortilla low-carb wheat
                 1                can  Cream of Chicken Healthy Request
                 1                can  Cream of Mushroom, 98% Fat Free
                 1                  c  1% low-fat milk
                 1                     onion -- chopped fine
                 3/4                c  salsa verde
                 1                 lb  cheddar cheese, shredded


               Cook chicken breasts until tender.  Shred into bite-sized pieces.  Saute
               onions.  Mix soups, milk,  salsa verde and add chicken and onions.  Slice
               tortillas into one-inch strips.

               To assemble, grease a large shallow baking dish.  Put 2 tbsp. of water in
               bottom of dish.  Place an overlapping layer of tortillas, then 1/3 of soup
               mixture, then 1/3 of cheese.  Continue layering until all ingredients are
               used, ending with cheese.

               Cover with foil and let stand in refrigerator for 24 hours to allow
               flavors to mix.

               Remove foil and bake at 325 degrees for 45-minutes.

               NOTES : Have made this several times.  It is delicious.  Even Les
                       likes it, and he isn't a big fan of chicken.
                       Made it again on 8/27/03 and took to Cayucos.  We really
                       enjoyed it, as usual.
