Puttanesca Zucchini Pasta




       With Lemon and Black Pepper Dressing










       Ingredients – Raw Zucchini Pasta

       2 Zucchini

       Juice of ½ an orange

       2 tbsp of extra virgin olive oil



       Ingredients – Puttanesca Sauce


       1 cup kalamata olives, pitted
       ½ tbsp dried Italian seasoning

       3 – 4 tomatoes, diced

       ½ tsp Celtic sea salt (or to taste)

       1 tbsp extra virgin olive oil infused with:
              1 drop Black Pepper essential oil

              2 drops Lemon essential oil




       Instructions

       Cut the ends off each zucchini, then spiralize. Mix spiralized zucchini,

       olive
       oil and orange juice gently by hand. For sauce – combine tomatoes,

       kalamata olives and spices, pour over zucchini. Top with fresh mint

       or herb of choice



       Serving Suggestion


       Sprinkle with a combination of nuts, seeds, hemp seeds, fresh herbs

       and raw olives
