Vegetable Chili

                                gluten free      ◊  Combine all ingredients in pot.
                             paleo friendly      ◊  Bring to boil. Lower and cook
                                    vegan
                                                     until sweet potatoes are soft,
                                   Serves 8          approximately 10 to 12 minutes.
                                                 ◊  Simmer on low, covered, until
                        2 cups onion, diced          prepared to serve.
                       2 cups sweet potato,
                         peeled and cubed
                      2 cups zucchini, diced     Note: This chili tastes even better
                          1can black beans       the next day, after all flavors have
                   28 ounces tomato, diced       been absorbed.
              1 1/2 tablespoons chili powder
                          1 teaspoon cumin
                 1 teaspoon salt, or to taste
                     1 cup vegetable broth
