Opened in December, the store has been warmly and exuberantly received by neighbors who delight in choosing from the %u201c wheels and wedges\amply and accessibly displayed in the shop%u2019s deep, open refrigerators that create a smorgasbord effect.THE CHEESE CELLAR is managed by Larry Buccellato Jr., who became quite an afficionado about cheeses when he worked in a cheese store elsewhere in Brooklyn. Larry, determined to combine this newly discovered interest with his college training in marketing and business administration, conducted a marketing research questionnaire in various neighborhoods to determine where a cheese store would be well received. His polling pointed to Brooklyn Heights and Larry went to work convincing his father Larry Buccellato, Sr. and cousin Louis Massina to back the operation. They came through as did many friends and relatives with ideas and energy to renovate the store and make it the showcase it is.The animated clusters of browsers daily as well as the eager, clamoring shoppers each Saturday and Sunday confirm the rightness of Larry%u2019s vision. The bright, white storefront of the shop with international flagsand displays of cheese and gourmet products is a welcome addition to the corner of Montague and Henry Streets, a junction that has long been the center of the Heights for pamphleteers, petitioners and card table causes.According to Larry, local residents bring to THE CHEESE CELLAR a highly developed, sophisticated knowledge of cheeses and a decided penchant for the French varieties. Brie is the best seller at THE CELLAR, but our own Vermont Cheddar comes in second. Customers are eager to sample new types, however, and Larry estimates that the shop gives away about 20 lbs. of cheese a week in \%u25a0 The breadth of THE CHEESE CELLAR%u2019S selection runs the gamut of textures and tastes, but even more offerings are planned. An additional walk-in refrigerator is being build in order to carry the greater diversity and depth of stock that their clientele requires. Additional gourmet items are also being brought in to complement the full line of imported crackers, fresh breads (in %u00adcluding French bread) and quality honey, preserves, pates and caviar already on the shelves.
