Classic Caramel Corn                               Directions



          8 servings            1 hour                  1. Preheat oven to 250 degrees fahrenheit. Spray

                                                          large shallow roasting pan with cooking spray,

                                                        2. Fill roasting pan with popcorn. Place in

                                                          together in a heavy 2-quart saucepan over

                                                          medium heat. Stir constantly until mixture

                                                        4. Stop stirring, allow mixture to boil for 5 minutes.
     1/2 cup light or dark corn
                                                        5. Remove from heat, stir in baking soda and

     syrup                                                vanilla until well combined.


     1/2 cup butter                                     6. Pour caramel syrup over warmed popcorn and
                                                          carefully stir with large spatula or sturdy spoon
     1/2 tsp salt                                         until evenly coated.


     1 tsp vanilla extract                              7. Return to the oven and bake for 45 minutes.
                                                          Periodically remove from the oven and stir to
     1/2 tsp baking soda                                  make sure caramel coats every bit of popcorn.

                                                        8. Remove from oven and spread onto a large foil

                                                          sheet greased with cooking spray.

                                                        9. Allow to cool, Once cooled, break apart and
                                                          store in a tightly covered container.
