Moroccan Stew

             This is an easy stew packed full of flavor and spices. It also has fiber galore
             for a win-win meal.



              Ingredients:
              - 3 Tbs  oil                                      - 28oz fire roasted tomatoes

              - 1 large sweet onion, chopped                    (or 2 fresh)

              - 3 cloves garlic, chopped                        - 2-3 cups vegetable broth

              - 1-inch knob ginger, minced (or 1                - 1 can of chickpeas

              Tbs powder)                                       - 2 tsp cumin
              - 1 sweet potato, cubed                           - 2 tsp tumeric

              - 1 head cauliflower, chopped                     - 2 tsp cinnamon

              - 2 carrots, chopped                              - Hot sauce, optional

              - 8oz mushrooms, chopped






              Instructions:

                1. Saute onion, garlic, mushrooms and ginger in oil.

                2. Add potato, carrots, cauliflower, and tomatoes.


                3. Stir well and simmer for 5-10 minutes.

                4. Add broth and simmer another 10-15 minutes.

                5. Add chickpeas and spices.

                6. Cover and simmer 30 minutes





              LET'S GET CREATIVE: While making this soup, see if you have any extra
              veggies around that you might add to this. "Plain" or "Base" veggies like

              squash, cabbage, zucchini can add even more nutrients. It is all about
              experimenting.
