Not your Momma's Chicken Casserole


             Did you grow up LOVING your Momma's Chicken Casserole but now that you are on
             a journey to wellness, you feel like it is a food you can no longer touch? Well let's

             change that mindset with this amazing casserole that may not be your Momma's but
             will leave you with the same cozy feeling reminiscent of home.


             Ingredients:                                                   Vegetable Saute Ingredients:

             2 chicken breasts cooked and shredded (optional)               1 Tbs olive oil

             1 cup chickpea rotini or favorite bean pasta, cooked           1 yellow onion chopped

             according to box                                               1/2 red bell pepper chopped

             3 Tbs balsamic vinegar                                         1 Tbs minced garlic

             1/3 cup white cooking wine                                     5 mushrooms, chopped

             1 cup sour cream or plain greek yogurt                         1/2 head of broccoli, chopped

             1 cup chicken broth (low sodium)                               1 c marinated artichokes,

             1/4  tsp pepper                                                chopped

             1/2 tsp red pepper flakes                                      1/4 cup fresh parsley, chopped

             1/2 Tbs oregano

             1/2 Tbs basil

             2 eggs

             1/2 cup grated parmesan cheese



             Directions:

             1. Preheat oven to 350 degrees.

             2. In a large skillet, sauté all of the vegetables until softened.

             3. Add white wine, vinegar and broth. Simmer approx. 10 minutes.

             4. Remove from heat and stir in spices and sour cream until well combined, then mix in

             eggs, cheese, chicken, and pasta.

             5. May bake in skillet or transfer to 9x13 pan and bake for 30 minutes.
