Salmon Patties
These salmon patties pair great with a fresh salad or steamed/grilled
vegetables of your choice. This is a fantastic way to use salmon leftovers.
Ingredients:
-1 cup shredded, cooked salmon
-6 Wheat or gluten free crackers
- 1/4 cup Parmesan cheese
- 3 eggs
-1 tsp Italian seasoning
- Salt/pepper to taste
Instructions:
1. Combine all ingredients in a
bowl and form them into
patties.
2. Place a pan on the stovetop
and turn onto medium heat.
Lightly drizzle oil of choice.
3. Fry salmon patties for about 5
minutes per side, or until crisp.
Easy Indian Lentils
Pair this yummy dish with some brown rice and steamed vegetables of your choosing
for a filling and well-rounded meal.
Ingredients: Instructions:
- 1 cup dry green lentils, soak in water for 15 min
- 2 large carrots, chopped 1. Heat oil in pot and cook carrot,
- 1 large onion, chopped onion, ginger and chili until soft.
- 4 cloves garlic, chopped
- 2 tsp ginger, minced (2 tsp ground) 2. Add lentils and spices. Stir together.
- 3 cups vegetable broth 3. Add broth and simmer covered for

- 1 tsp each, turmeric and coriander 15-20 minutes.
