Grilled Salmon
This is a great nutritious option for cookouts. Serve with grilled vegetables.
Ingredients: Instructions:
- 4- 6oz salmon filets 1. Mix all ingredients and marinate salmon in the
- 3 Tbs brown sugar refrigerator for at least 30 minutes.
- 3 Tbs bourbon 2. Heat oven or grill to 400 degrees.
- 2 Tbs soy sauce 3. Place salmon (skin side up) on a baking sheet or foil.
- 1 Tbs ginger 4. Top with sliced lemon and spices
- 1 sliced lemon 5. Add Tomatoes
- Cherry tomatoes 6. Bake 20 minutes then flip and cook an additional 5
- 3 garlic cloves, minced minutes.
- ¼ tsp black pepper
Spinach Artichoke Chicken
Filling and delicious. Serve with additional vegetables.
Ingredients:
- 1 chicken breast, boiled (or 1 can) - ½ red onion, chopped
- 1 cup elbow noodles, cooked - 3 cloves garlic, chopped
according to directions - ¼ cup sour cream
- 2 Tbs olive oil - 2 eggs
- 3 cups fresh spinach leaves, - ¼ cup parmesan cheese
chopped - ¼ cup feta cheese (or cheese of
- 12oz marinated artichoke hearts, choice)
drained - 1 tsp each, garlic salt and pepper
Instructions:
1. Saute vegetables in oil until onion is tender.
2. Combine all ingredients in large bowl and stir well.
3. Grease 13x9 baking dish. Pour mixture into dish.
4. Bake at 400 degrees for 30 minutes. Drizzle with balsamic vinegar glaze while still hot.
