Pineapple Shrimp Stirfry

             Just like your favorite take-out but packed with more nutrition!

             Marinade Ingredients:                Stir Fry Ingredients:

             - 1lb shrimp                         - 3 Tbs vegetable oil
                                                  - 1 cup rice, prepared as directed
             - 1 green onion, minced
                                                  - 2 eggs
             - 1 large garlic clove,              - 1 pepper, chopped

             minced                               - ½ onion, chopped
             - 1-inch piece ginger,               - 2 cloves garlic, minced
                                                  - 2 cups chopped broccoli
             minced (or 1tsp powder)
                                                  - 1 cup pineapple chunks (fresh or canned)
             - 1 Tbs sesame oil                   - 1 cup frozen peas or edamame

             - 1 Tbs honey                        - 1 Tbs soy sauce

             - 4 Tbs soy sauce                    - 2-3 Tbs peanut butter



             Instructions:
               1. Combine marinade ingredients and add shrimp and refrigerate at least 30
                  minutes.
               2. Saute onion, garlic, pepper, broccoli and ginger in oil.
               3. Add shrimp and cook until liquid is gone.
               4. Add eggs and scramble.
               5. Add soy sauce, peas and pineapple and mix well.
               6. Add peanut butter and stur until smooth.
               7. Add rice and combine.
               8. Serve and enjoy!
