Taco Chicken Casserole
This recipe is very flavorful and is also a great way to use up some of the items in
the fridge before they go bad! Serve with a side salad for a well-rounded meal.
Ingredients: Instructions:
1. In a large baking dish, layer the ingredients as
- 3 cups of cilantro lime rice
follows:
- 3 cups of taco seasoned a. First layer: cilantro lime rice
beans b. Second layer: taco seasoned beans with
salsa mixed in
- 1-2 cups of salsa
c. Third layer: Shredded chicken and corn
- 3-4 cups of d. Fourth layer: Shredded cheese
shredded chicken e. Fifth layer: Sliced jalapenos
2. Bake in the oven for 30 minutes at 350 degrees,
- 1 cup of frozen corn
or until the cheese is lightly browned on top.
- 3 cups of shredded fiesta 3. Add fresh cilantro and serve.
(Mexican-style) cheese
- 2 jalapenos, diced
Instructions for Cilantro Lime Rice:
- Fresh cilantro Combine cooked rice, lime juice, cilantro, salt and
pepper to taste.
