Tabbouleh









              This light and refreshing option is great in the summer.
              Ingredients:                  Directions:
              - 2 bunches fresh parley        1. Combine all ingredients except bulgur in food processor.
              - 6 green onions
              - 4 cloves garlic               2. Pulse until parsley is coarsely chopped.

              - 3 large tomatoes              3. In a separate small bowl, combine bulgar and boiling
              - 4-6 Tbs olive oil
              - Juice of 2 lemons               water. Cover for 5 minutes.
              - 1 Tbs mint leaves             4.  Fluff with a fork and combine with other ingredients.
              - Salt and pepper to taste
              - 1 cup bulgur + 1 cup          5. Stir together well. Best if refrigerated overnight to allow
              boiling water                     flavors to combine.








              Black Bean Corn Salsa


             Use this salsa to top eggs, mix into wraps, or simply dip with tortilla chips.



              Ingredients:                       Directions:
              - 1 can black beans                 1. Combine all ingredients in a large bowl.
              - 1 bag frozen corn                 2. Mix well to combine.
              - 1 tomato, diced
              - 1/2 cup cilantro
              leaves, minced
              - 1/2 large onion, diced
              - 3 cloves garlic,
              minced
              - 1 Tbs chili powder
              - 1 tsp garlic salt
              - Hot sauce (optional)
              - ½ lime squeezed (or 1
              Tbs juice)
              -Optional: Garbanzo
              Beans
