Vegetarian Sloppy Joe


             Serve on a whole wheat or gluten free bun with a side salad and/or
             baked fries (sweet potato or russett potato).



              Ingredients:
                                                         - 3 Tbs Worchester
              - 2 cups water
                                                         - 1-2 tsp chili powder
              - 1 cup green lentils, rinsed
                                                         - 1 tsp cumin
              - 2 Tbs olive oil
                                                         - 2 tsp paprika
              - 1 onion, chopped
                                                         - Salt and pepper to taste
              - ½ green pepper, chopped
                                                         - ¼ cup liquid smoke
              - 3 cloves garlic, minced
                                                         - ½ head cauliflower, diced
              - 15oz diced tomatoes (3 fresh)
                                                         - 1 pint mushrooms, diced
              - 2 Tbs sugar



              Instructions:
                1. Cook lentils in boiling water for 20-30 minutes.
                2. Sautee veggies in oil until soft.
                3. Add tomatoes and spices.
                4. Mix well and cover with lid until cauliflower soft. -Reduce with lid off if too saucy.
                5. Serve on Bun of choice
