Presto Pesto Pasta
Don't let the black noodles throw you for a loop. These are easy, quick to make and
taste amazing with the pesto and cheese!
Ingredients: Directions:
1 package black soybean pasta 1. Cook pasta according to package.
4 Tbs favorite pesto sauce 2. When done and drained, place back
1 Tbs olive oil in pot with heat on low.
2 cups frozen or fresh spinach 3. Add all ingredients except cheese and
½ cup diced tomatoes (cherry tomatoes are stir until spinach cooks down and dish is
great here) warm.
Fresh Parmesan cheese or goat cheese to top 4. Serve topped with a dash of cheese.

Easy Tuna Salad
Perfect for when you're needing something quick and light!
Ingredients: Directions:
- 1 can tuna in water 1. Mix all ingredients together in small bowl.
- 1 Tbs mayo or sour cream (optional) 2. Scoop 1/3 of mixture onto one slice of
- 1 Tbs relish bread and top with lettuce, tomato and
- ½ Tbs Dijon or yellow mustard onion.
- Salt and pepper to taste 3. Create sandwich with another slice of
- ¼ cup each celery ribs, green onions, and bread.
fresh parsley (all optional) (Makes 2-3 sandwiches)
