Indian Chickpea Stew
This is such a warm, comforting dish. It would be great paired up with toasted whole
wheat bread or a side salad.
Ingredients: Instructions:
- 2 cloves garlic, minced 1. Heat oil in a large skillet and saute
- 1-inch ginger knob, minced (or 1 tsp ground)
- 1 tsp cardamom onion, garlic, ginger, and
- 2 whole cloves mushrooms until soft.
- 1 tsp coriander
- 1 tsp garam masala 2. Add lemon juice, spices,
- 1 tsp turmeric cauliflower, potato, tomatoes, and
- 1 tsp chili powder chickpeas.
- 1 (14oz) can diced fire roasted tomatoes
- 1 Tbs lemon juice 3. Cover and simmer until potato soft
- ½ cup milk (plant or reg) about, 15 minutes.
- 4 Tbs oil
- 1 potato (reg or sweet), cubed 4. Add milk and stir well. Simmer
- 1 head cauliflower, chopped in bite-size pieces another 10 minutes.
- 1 large onion, chopped
- 2 cups mushrooms, chopped
- 1 can chickpeas, drained
