White Bean Lentil Stew



             Ingredients:                                        - 2 cups fresh spinach leaves

             - 1 can white beans, rinsed (cannellini)            - 3 tsp smoked paprika
             - 1 cup green lentils, rinsed                       - 4 cups vegetable broth

             - 2 Tbs olive oil                                   - 14oz fire roasted diced tomatoes

             - 3 leek stalks, chopped                            - 4 springs fresh thyme leaves (1 Tbsp dry)
             - 1 bunch green onions, chopped                     - 1 bunch fresh parsley, chopped

             - 4 cloves garlic, chopped                          - Juice of ½ lemon (1 Tbs)

             - 3 stalks celery, chopped                          - Salt and pepper to taste

             - 3 carrots, chopped                                - 1 bay leaf


             Instructions:

               1. In large pot sautee onion, leeks, celery and garlic in oil until soft.
               2. Add carrots, spinach, tomatoes, and spices. Cook until spinach wilted.

               3. Add broth and lentils then simmer 30 minutes covered.

               4. Add beans and lemon juice.
               5. Simmer uncovered to create stew-like consistency.
