3 Bean Chili

             Easy, delicious and filling. Serve with crackers and enjoy! This also makes great

             leftovers for lunch.

             Ingredients:                         Instructions:

             - 2 Tbsp olive oil                      1. Combine all ingredients in a crockpot on
             - 3 stalks celery, chopped                HIGH for 6 hours (literally, that's it).

             - 1 green pepper, chopped
             - 1 onion, chopped

             - 3 cloves garlic, minced
             - 36oz diced tomatoes

             - 1 can chick peas, drained
             - 1 can black beans
             - 1 can kidney beans

             - 1 cup water or broth
             - 1 cup frozen corn

             - ½ zucchini, cut in quarters
             - 1.5 Tbsp chili powder
             - 1.5 Tbsp parsley

             - 2 tsp sugar
             - 2 tsp basil

             - 2 tsp oregano
             - 2 tsp cumin

             - 1 tsp all-spice
             - ½ tsp salt

             - ¼ tsp pepper
             - 2 bay leaves
             - Hot sauce (optional)


              TIP: This is a recipe that you can get
              creative with. Try adding more or fewer spices.

               Don't forget to taste along the way. What other veggies
              or beans could you add? Don't have all the ingredients,

              don't worry as we also call this everything in the pantry
              style cooking learned from our resourceful college days.
