Tomato Artichoke Soup
Pair this soup with a delicious salad, sandwich or wrap.
Ingredients: Directions:
- 1 sweet onion, chopped 1. In a large saucepan, saute oil with
- 2 bunches green onions, chopped onions and garlic.
- 3 cloves garlic, minced 2. Once onions are soft, add all other
- 3 Tbs olive oil ingredients except milk, cheese, and
- 28oz canned crushed tomatoes cream.
- 2 Tbs tomato paste 3. Simmer about 20 minutes.
- 9oz jar marinated artichokes, chopped 4. Add cream and milk.
- 2 tsp salt 5. Stir well and bring to a simmer.
- 1.5 cups chicken or vegetable broth 6. Add cheese and continue to stir until
- 2.5 cups milk (plant or dairy) melted and combined.
- 1.5 cups shredded cheese 7. Serve and enjoy.
- ½ cup heavy cream (optional, or add more milk)
Broccoli Cheese Soup
This quick and yummy soup is packed with a nutritious punch.
Ingredients: Directions:
- 4 Tbs olive oil 1. Saute all vegetables except broccoli in oil for
- 4 cloves garlic 10 minutes or until soft.
- 5 carrots 2. Add broccoli and boil until softened.
- 1 potato (reg or sweet) 3. Place all in food processor until smooth slurry
- 3 celery stalks forms.
- 1 sweet onion 4. Return to heat in pot then add milk and
- 1.5 heads broccoli cheese/nutritional yeast.
- 2-3 cups vegetable broth
5. Simmer 3 minutes while continuously stirring.
- 2 tsp salt
6. Let cool and serve warm.
- 2 cups milk (plant or dairy)
- 1 cup shredded cheese
