Ramen Noodle Soup
A healthier and tastier take on a childhood classic.
Ingredients:
Directions:
- 2 Tbs oil
1. Saute garlic, ginger, pepper, mushrooms,
- 4 cloves garlic, minced
onion and beans in oil.
- 1 Tbs ginger, minced
2. Add curry paste and stir well.
- 1 pint mushrooms
3. Add broth, soy sauce, and honey.
- 1 cup chopped green beans
4. Combine coconut milk and peanut butter in

5. Whisk until smooth.

- 1 Tbs green curry paste
7. Stir continuously until combined.
- 4 cups vegetable broth
8. Simmer on medium heat for 10 minutes.
- 14oz coconut milk (lite)
9. Add lime juice and ramen noodles.
- ½ cup peanut butter
10. Cover and simmer another 10 minutes.
- 2 Tbs soy sauce
11. Serve with crushed peanuts and cilantro
- 2 Tbs honey
leaves on top if desired.
- Juice of 2 limes
- 1 pkg Ramen noodles (do not
use spice pack)
