Pumpkin Cookies
Not just for the fall, these cookies pack in the flavor along with vitamins A and C!
Ingredients:
- 1 cup canned pumpkin
- ¼ cup butter or coconut oil softened
- ¼ cup applesauce
- 1 egg
- ¼ cup brown sugar
- 1 banana or ½ cup grated carrots
- ¼ cup flax seed
- ½ cup wheat germ
- ¼ cup oats
- ½ cup almond flour
- ½ cup favorite nuts (pecans, walnuts, both!)
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp nutmeg
- 2 tsp cinnamon
- ½ tsp cloves
- Pinch of salt
- 1 tsp vanilla
- chocolate chips (optional)
Instructions:
1. In a small bowl combine banana, vanilla, egg and applesauce/butter.
2. In a larger bowl combine all other ingredients.
3. Stir in wet ingredients until just combined.
4. Drop cookies onto parchment paper lined baking sheet and bake at
350 for 15 minutes until golden brown on top.
