Blueberry Crumble
A delicious way to get in a serving of fruit!
Ingredients for blueberry filling: Instructions:
- 24 ounces fresh blueberries
- 2 Tbs lemon juice 1. In a greased 8x8 pan, toss together the
- 1 tsp lemon zest blueberry filling.
- 3 Tbs flour 2. Place all ingredients of the crumble in a
- ¼ cup sugar
- 1 tsp cinnamon food processor until small pea-sized balls of
dough form.
Ingredients for Crumble:
- 1 cup flour 3. Sprinkle over blueberries and bake covered
- ¼ cup sugar for 45 minutes.
- 1/3 cup brown sugar
- Dash of salt 4. Serve warm by itself, over pancakes, or ice
- ½ stick cold butter
- ½ cup cold apple sauce cream!
- ½ cup oatmeal
- ½-1 cup nuts (walnuts, pecans)
Zucchini Brownies
Ingredients:
- 1 cup almond butter - 1 tsp vanilla
- 2 Tbs butter or coconut oil - 1 tsp baking soda
- 1 ½ cup shredded zucchini - 1 tsp cinnamon
(extra moisture squeezed out) - ½ tsp nutmeg
- 1 egg - 1 cup chocolate chips
- 1/3 cup honey - 1/4-1/2 cup cocoa powder
Instructions:
1. Melt chocolate chips with almond butter and 2 Tbs of coconut oil or butter in the
microwave.
2. Stir every 30 seconds to prevent burning until well combined.
3. Stir all ingredients together until combined.
4. Pour into greased 9x9 pan and bake for 45 minutes or until a knife in center or brownie
comes out clean.
