Pumpkin Granola

              This granola is a great snack to keep handy in the pantry. Use this granola on top of

              yogurt or grab a handful and chow down.



             Ingredients:

             - 3 cups old fashioned oats
             - 1.25 cups raw pecans or sliced almonds

             - ¼ cup pumpkin seeds (optional)
             - ¼ tsp salt

             - 1 Tbs pumpkin pie spice

             - 1 Tbs vanilla extract
             - ¼ cup coconut or olive oil

             - 1/3 cup maple syrup or honey
             - ¼ cup coconut or brown sugar

             - 1/3 cup pumpkin puree



             Tip: Get creative with this and make it your own. Add different spices

             like nutmeg or cinnamon. Add different nuts if you would like. This is a

             fun one to do with kids as well.






              Instructions:
                1. Preheat oven to 340 degrees.

                2. Mix oats, nuts, seeds, sugar, spices and salt in large bowl.
                3. In a separate bowl, combine oil, pumpkin, syrup and vanilla. Microwave

                   until oil is melted and combine.
                4. Pour over dry ingredients and quickly mix with a wooden spoon.
                5. Spread evenly onto two baking sheets and bake for 25-30 minutes,

                   stirring at the half-way point. Remove and allow to cool.
