Cranberry Almond Granola
Another great pantry staple to enjoy with yogurt or by the handful!
Ingredients:
- 2 cups rolled oats -1/4 cup coconut flakes (optional)
- 1/4 cup flax seed - 2 tsp vanilla or lemon extract
- 1/4 cup wheat germ - 3 Tbs coconut or olive oil
- Dash of salt - 3 Tbs melted butter
- 1 cup dried cranberries - 1/3 cup almond or peanut butter
- 1 cup pecans - 1/4 cup honey
- ½ cup cashews - 1 Tbs water
Instructions:
1. Whisk wet ingredients then toss with dry ingredients.
2. Spread onto 2 baking sheets.
3. Bake at 350 degrees for 30-40 minutes.
Oatmeal Stuffed Baked Apples
These stuffed apples would be a great option for dessert or breakfast.
Ingredients: Instructions:
- 4 large apples 1. Set oven to 375 degrees.
- 2 Tbs butter, soft 2. Either core apples or slice in half and cut out seeds. Set in
- ¼ cup brown sugar 8x8 baking dish with bottom just barely filled with water (so
- 2/3 cups rolled oats that apples are emerged at bottoms).
- 1 tsp cinnamon 3. Cream butter and sugar.
- ¼ tsp nutmeg 4. Add oatmeal and spices then nuts.
- Pinch of cloves 5. Pour in hot water to soften oats.
- 1 tsp vanilla 6. Fill/top apples with oatmeal mixture and cover with foil.
- ½ cup chopped nuts 7. Bake 20 min then remove foil and bake additional 10
- ½ cup boiling water minutes.
8. Drizzle with small amount of syrup before serving (optional).
