Black Mustard Seed
Medicinal part: The dried ripe seed of Brassica nigra, family Cruciferae. It
yields not less than 0.7% allylisothiocyanate
Constituents:
1-Black mustard seeds contains about 4% of the thioglycoside, sinigrin and
the enzyme myrosin ; after maceration with water at 37 Cº, yields 0.7 –
1.3% volatile oil.
2-The volatile oil contain over 90% of allylisothiocyanate.
3-The seeds also contains about 27% of fixed oil and 10 % mucilage
Note: Breaking Brassica nigra seeds and mixing with water confers the
flavor to the mustard paste, similar to that of horseradish. This flavor is due
to allylisothiocyanate (volatile compound) released from the degradation of
sinigrin during a hydrolytic reaction called the
“mustard oil bomb”
