It is a reducing disaccharide that is fermentable and is hydrolyzed by acids or the
enzyme maltase to yield 2 molecules of glucose.
Uses:
Nutrient for adults and infants.
B- Non- Reducing Disaccharides
Sucrose (Saccharum. sugar, cane sugar, beet sugar)
2-O-(α-D-glucopyranosyl ) α -D-fructofuranose
Occurrence:
Sugar cane (Saccharum officinarum L.; Graminae).
Sugar beet (Beta vulgaris L.; Chenopodiaceae).
Properties:
It does not reduce Fehling's solution.
Readily hydrolyzed (even in the cold) by acid solution to give one molecule of each
of D-glucose and D-fructose (invert sugar).
It is also hydrolyzed by the enzyme invertase.
Uses:
1- Preparation of syrups.
2- Diluent and sweetening agent in pharmaceutic products e.g. lozenges and
powdered extracts.
3- In 66% w/v in an aqueous solution, it is used as bacteriostatic and preservative.
