Immunity Soup
Serve this soup as hot as you can stand it for a full healing and immunity
boosting experience!
Ingredients: Instructions:
1 tbsp avocado oil Heat the oil in a large soup pot over
1 medium onion, very thinly sliced medium heat. Add the onion, celery,
3 celery stalks, very thinly sliced carrot, garlic, and ginger. Saute until
1 medium carrot, very thinly sliced everything is just soft, being careful to
8 cloves garlic, very thinly sliced avoid browning.
2 tbsp grated ginger
3/4 tsp finely ground white pepper Stir in the white pepper and 10 cups
1 1/2 cups mushrooms, trimmed of water. Bring the broth to a simmer
8 ounces firm tofu, sliced into thin slabs and let simmer for 15 minutes Add the
2 1/2 tsp fine grain sea salt mushrooms, tofu, and salt, simmering
Chopped green onions for another 5 minutes. Stir well and taste
for seasonings. Serve in bowls with lots
of chopped green onions
