                               Frances’ Pinto Bean Pie—Mock Pecan Pie

                          Aunt Frances published this recipe in a 1982 church cookbook. It is a depression era recipe
                                 that shows how people made do with the ingredients they had on hand.
                            It seemed appropriate to include this recipe as an inspiration to our family members
                               who are enduring hard times and shortages of food during the 2020 Pandemic
                                                 as we are writing this cookbook.

                                                     1‐1/2 cups sugar

                                    1 teaspoon each: allspice, cinnamon, and nutmeg

                                         1‐1/2 cups cooked, mashed pinto beans

                                                    1 whole egg, beaten

                                                    2 egg yolks beaten

                                                     1 teaspoon vanilla

                                                 1 unbaked 9 inch pie shell



                                1.  Combine sugar and spices in a medium mixing bowl

                                    and mix well.

                                2.  Add beans, egg, egg yolks, and vanilla.

                                3.  Mix well until smooth.

                                4.  Pour into pie shell.

                                5.  Bake at 350 degrees for 15 minutes.

                                6.  Reduce heat to 300 degrees and bake 45 minutes or

                                    until set.
