                           Jambalaya ~ Martin Barnett

           This recipe serves 3 - 4, cooking time 45 mins
           Ingredients:
           16 - 24 prawns (raw and peeled or pre-cooked)
           4 oz / 110 g chorizo peeled and cut into 2 cm pieces
           1 - 2 tablespoons olive oil
           1 onion peeled and cut into 1 cm slices
           2 garlic cloves crushed
           2 - 3 sticks of celery sliced into 1 cm pieces on the diagonal
           ½ teaspoon chilli flakes
           1 yellow pepper deseeded and cut into 1 cm slices
           6 fl oz / 175 ml white basmati rice
           1 teaspoon Tabasco Sauce
           3 medium tomatoes dropped into boiling water for 1 minute, peeled
           and chopped
           1 bay leaf
           12 oz / 340 g stock (chicken or fish)
           1 teaspoon flat leafed parsley chopped to garnish
           2 - 3 spring onions finely sliced to garnish
           + accompaniment of say snap peas
