Veg Samosas

                                               Served with a tomato chutney

                                         Make the tomato chutney

                                             Preparation time approx. 10 minutes


           Ingredients required:                                                Equipment required:

          •   8 cherry tomatoes                                                 • Sharp knife

          •   1 spring onion                                                    • Saucepan

          •   120g cucumber
          •   Fresh coriander






           Pantry Ingredients required:

          •   1 tbsp white sugar

          •   120ml water
          •   2 tsp soy sauce





          1. Place into the saucepan the white sugar and water and set over a
             medium heat.

          2. Quarter the cherry tomatoes and add to the saucepan. Then remove the
             top and bottom of the spring onion and then thinly slice and add to the
             saucepan. Stir thoroughly and cook for about two minutes until the
             tomatoes have softened and the mixture turns syrupy.

          3. Once the tomatoes have softened remove the saucepan from the heat.
             Then dice a cucumber and finely chop some coriander and add to the
             saucepan, stir through and then place the chutney into a container until
             later.
