9. Turn the oven up to 200oC (conventional) 190oC(fan) and
place the prepared mac and cheese into the oven and cook
for 15 minutes until slightly brown on top.
10. In a small sauce pan over a medium heat, add a knob of
butter, a diced garlic clove, and all of the spinach Pour in
100 ml of double cream and cook on a medium heat for
2-3 minutes until spinach is softened. Add a pinch of
cayenne pepper to give it a little kick. Once ready add to a
serving dish and place in a warming cabinet.
11. When the mac and cheese has browned on the top and is
bubbling place in the warming cabinet until all of your meal is
ready.
12. Return to the frying pan used to cook the steak, add it to a
low heat and add 100ml of water and the peppercorn sauce
and allow to heat and reduce ever so slightly. Once warmed
pour into a jug and serve the rest of your meal.
13. When the rest of your meal is ready, cut the steaks from the
bone, and then cut into slithers about 8mm thick across the
width of the steak. Place in the middle of a warmed serving
plate with the bones in the centre.
14. Cover with a little sauce and some chopped parsley. Serve
your meal allowing everyone to pick from the steaks, mac
and cheese
15. Serve and enjoy. Well done
