             RECIPE


             Orange Syrup Cake

              Makes approx. 12 slices
              Prep time: 15 minutes
              Cooking time: 30 minutes


              Ingredients

              Olive oil spray
              1 cup caster sugar
              125g butter
              2 eggs
              200g vanilla yoghurt
              2 tsp finely grated orange rind
              1 1/2 cups self raising flour
              1/2 cup orange juice



              Method
              1. Pre-heat oven to 180C. Spray a 20cm
                  round cake pan with oil. Line the base
                  and sides with baking paper.
              2. Use an electric beater to beat the butter
                  and 3/4 cup of the sugar until smooth.
                  Add eggs one at a time, beating well
                  after each addition. Stir in yoghurt and
                  rind. Fold through the flour. Spoon the
                  mixture into the pan and smooth the
                  surface with the back of a spoon.
              3. Bake for 40 minutes or until cooked when
                  tested with a skewer.
                  Remove cake from oven. Stand for 5
                  minutes before turning onto a serving
                  plate.

              4. Meanwhile combine the orange juice and
                  remaining sugar in a small saucepan. Stir
                  over medium heat without boiling until the
                  sugar dissolves. Bring to the boil and
                  cook 4 minutes or until syrupy.
              5. Pour the syrup over the cake and serve
                  warm sprinkled with strips of orange rind.
