       Cashew Sour Cream









        INGREDIENTS
                                                                                  Makes 6 servings
        • 1 cup (130g) raw cashews, soaked in hot water
        for 20 minutes
        • the juice of 1 lemon                                                    121 calories per serving
        • ½ tsp salt
        • ¼ cup (60ml) + 3 tbsp water                                             Macros per serving

        METHOD

        1. Soak the cashews in hot water for 20 minutes, then drain them and put into a blender.
        2. Add the rest of the ingredients to the blender and blend on high until smooth.
        3. Place the cashew sour cream in the fridge and let cool before serving.
