Actually, Harley and his parents also enjoyed cooking some of
their own favorites at home. Kevin and Harley liked veggies and
spicy food. They also both preferred dry sandwiches with no mayo or
mustard. They often made “Jerry's Soup,” a bacon, corn, and potato
chowder that Kevin's dad created. Harley, himself, was expert at
refining a tasty Hamburger Helper, cooking venison, Mexican
casseroles, and his superb Hidden Valley Ranch Chicken.
Harley also had his own recipe for Spaghetti Sauce which he made
from scratch to the delight of those who had a chance to taste it.
Harley's Spaghetti Sauce
3 medium onions
2 garlic cloves
1 bell pepper
½ cup olive oil
6-8 Roma tomatoes or 3-4 regular tomatoes
Salt, pepper, oregano, and basil to taste.
Chop onions, garlic and bell pepper up. In large pot, sauté in oil.
Chop up tomatoes and add to pot. (Add other vegetables, as desired.)
Add oil as needed. Cook down for ten minutes. Add seasoning. May
need to add a little water to keep from boiling down too much before
everything is ready. Cook for about twenty minutes stirring
occasionally.
Let cool. Run through a blender to make it smooth.
Make a meat sauce by browning ground meat in an onion and
garlic clove. Then add the tomato sauce to the meat. Spinach can also
be added here if desired.
Serve over your favorite pasta. And enjoy!
