Taco Soup #2

Ingredients:
2 lb ground beef
1 chopped onion
2 cans pinto beans
2 cans of yellow hominy or whole kernel corn
1 can Rotel tomatoes
2 cans stewed tomatoes
1 pack Taco seasonings
1 pack Hidden Valley Ranch Dressing mix
grated cheese, sour Cream, diced green onions
(your choice)
Fritos
Brown beef and onions. Drain. Mix all other
ingredients together in large Dutch oven and cook
30 minutes, Serve over Fritos and top with cheese.
Can also add green onions and sour cream to top
when eating.

Tomato Soup

Cook 6-8 medium, ripe tomatoes and 2 Tbsp
chopped onion until onions are tender. Add ½ tsp
baking soda and 2 Tbsp margarine. Then add 3 cups
milk or more according to amount you want to
make. Add 2 Tbsp corn starch or flour to 1 cup of
milk. Salt and pepper to taste. Be sure to add the
soda to the mixture before the milk or milk will
curdle.
This recipe came from a 100-year-old woman. I had
tried without success to make my Mom's tomato
soup like this. The soda was the cure. Before, my milk
always clabbered. Now I can enjoy a food from my
childhood.
