Hearty Beef Crock Pot Recipe

                                    Ingredients:

                                    1½ lb round steak (cubed)
                                    8 new potatoes (cut into fourths)
                                    1 cup baby carrots
                                    1 onion (thinly sliced)
                                    1 (14 oz) can diced tomatoes
                                    1½ cups beef broth
                                    chopped fresh parsley
                                    olive oil
                                    salt and pepper to taste

                                    Directions:
                                    Lightly oil a skillet. Sprinkle steak with salt and
                                    pepper and brown over high heat on both sides.
                                    Layer potatoes, carrots, beef and onion in crock
                                    pot. Mix beef broth and tomatoes. Gently pour
                                    mixture over other ingredients into crock pot. Cover
                                    and cook on low for approximately 8 hours or until
                                    tender. Sprinkle with parsley and serve.
