Hominy Casserole #1

                                    Ingredients:

                                    1 box Mexican Velveeta or some leftover
                                    Rotel/Velveeta cheese dip
                                    2 cans yellow hominy, well drained
                                    1 can cream of mushroom soup
                                    onion to taste
                                    crushed Fritos or tortilla chips

                                    Melt Velveeta with soup and onion. Pour over
                                    hominy. Sprinkle chips on top. Bake 20-25 minutes
                                    at 350°F until bubbly.

                                    I don't care much for plain hominy but I really love
                                    this casserole. This recipe was given to me by
                                    Susan and Robbie's Grandmother Hazel Plyler.

                                                  Hominy Casserole #2

                                    Ingredients:

                                    2 cans hominy, drained
                                    1 can cream of chicken soup
                                    2 hot peppers, chopped
                                    1 medium onion, chopped
                                    1 stick margarine
                                    1 cup grated cheese

                                    Sauté onions in butter. In casserole dish, add
                                    hominy, soup, pepper, cooked onion and half of
                                    cheese. Mix well. Salt to taste. Top with rest of
                                    cheese. Bake at 350°F for 30 minutes or until cheese
                                    melts. This is also good with crushed Fritos on top.
