Mexican Casserole

                                    Ingredients:

                                    2 lb ground beef
                                    1 can cream of mushroom soup
                                    1 can Rotel tomatoes with peppers
                                    2 cans Ranch style beans
                                    Doritos
                                    Shredded cheese onion (optional)

                                    Cook beef and chopped onions in a skillet, drain off
                                    grease. Preheat oven to 375°F. Start with meat and
                                    layer: meat, Doritos, beans, ½ can soup, cheese
                                    and repeat. Top with Rotel tomatoes. Cover loosely
                                    with foil. Bake for 1 hour.

                                          Muffin Pan Stuffed Chicken Breast

                                    Ingredients:

                                    6 half chicken breasts
                                    1 large can spinach
                                    1 pkg mozzarella cheese

                                    Fill chicken with 1 Tbsp spinach and 1 Tbsp cheese.
                                    Roll chicken around the stuffing and place in a
                                    muffin pan. Bake for 35 minutes at 400°F.
