Grandma Margaret Gatlin's Butterscotch Pie

                                    Ingredients:

                                    1 cup dark brown sugar
                                    3 Tbsp flour
                                    pinch of salt
                                    1 cup milk
                                    2 eggs, separated
                                    2 Tbsp butter
                                    1 8- or 9-inch baked pie shell
                                    ¼ tsp cream of tartar
                                    4 Tbsp sugar

                                    Combine sugar, flour, and salt in top of double
                                    boiler. Heat milk and slowly stir into flour and sugar
                                    mixture. Cook over boiling water until mixture
                                    begins to thicken. Beat egg yolks in small bowl and
                                    stir about 1 cup of hot liquid into egg yolks; combine
                                    the two mixtures in top of double boiler. Add butter
                                    and cook until thick and pour into pie shell. Make
                                    meringue by beating egg whites and cream of tartar
                                    until stiff. Gradually add 4 Tbsp sugar to egg
                                    whites and continue beating until it holds a peak.
                                    Cover pie with meringue and bake at 400°F until brown.
