Jelly Cookies #1

Ingredients:
¾ cup lard, shortening or margarine, softened
⅔ cup sugar
1 egg
1 tsp vanilla
1 tsp almond flavor
2 cups flour
½ tsp baking powder
Mix lard and sugar. Add vanilla, almond flavoring,
egg and mix well. Add flour and baking powder. Mix
well. Drop by rounded teaspoon on ungreased
cookie sheets. Make well in center of each cookie
dough. Fill with jelly. Bake at 350°F for 15 minutes.
Yield: 3 dozen.
I use homemade blackberry and muscadine jellies to
fill. Anis gave me this recipe along with others and
a jar full of cookie cutters for Christmas one year.
These cookies are my family's favorite along with
the Norma Lockett Tea Cakes.
Jelly Cookies - Optional Fillings #1
3 oz cream cheese, softened
1 cup powdered sugar
2 Tbsp flour
½ tsp vanilla
½ cup finely chopped pecans
½ cup chopped coconut
Mix all. Bake cookies. Cool. Fill centers with above
mix.
Jelly Cookies - Optional Fillings #2
1 cup heaping sifted powdered sugar
3 Tbsp cocoa - sift with sugar
1½ to 2 Tbsp hot water - added slowly for stiff filling
1 tsp at a time.
