The ESI team  estimated the annual carbon emissions from food wastage by extrapolating the monthly average offsets.

            The data was used to calculate the annual carbon emissions associated with the consumption of each resource.  The
            conversion ratio for each resource was used to calculate the carbon emissions. The carbon emissions were then summed up
            to obtain the total carbon emissions associated with the annual resource consumption. at Knots Café. Resource consumption
            conversion factors used included:

                    •    Water = 1.43kg CO2/m3
                    •    Plastics = 6kg CO2/kg
                    •    Food = 5kg CO2/kg

             Table 1 shows the consumption of resources on an annual basis at Knots café.

             Eco-Solutions                                       Eco-Solutions 1:

             Through collaboration with Knots Café, the ESI team devised   Collection and donation of meat offcuts
             eco-friendly solutions to address food wastage of offcut
             meats.                                              Meat offcuts were collected from Knots Café for donation
                                                                 to the organisation, Helping Hand, where they can be
                                                                 repurposed, for example, into pet food. Approximately 20kg
                                                                 of meat offcuts are collected monthly from the cafe 40 kg of
                                                                 food waste, potentially saving 1,200kg of CO2 emissions.
