            Introduction

            Knots Café is a subsidiary of XpressFlower.com Pte Ltd,
            situated at 160 Paya Lebar Road, Orion Building. Knots Café
            epitomises the fusion of flowers, food, and furniture, striving
            to  craft  an  ambience  that  envelops  patrons  in  warmth
            and comfort (Figure 1). Renowned for its commitment to
            sustainability,  Knots  Café  specialises  in  crafting  beautiful,
            hand-crafted pieces and serving wholesome, nourishing
            food.
            The  primary  objective  of  the  ESI  team  was  to  conduct  an
            environmental review of the café’s business operation,
            focusing on the wastage of offcut meats by repurposing

            reaching an alarming level of 817,000 tons (2021 data), any
            reduction in food wastage is welcomed to promote food
            security and cutback on greenhouse gas emissions.

            Environmental Review

            The  ESI  team collaborated with Knots Café to conduct
            an environmental review to identify and implement eco-
            friendly solutions to its business operations.
            The team observed  that Knots  Café routinely  generates
            offcuts from filleting meats, including salmon and beef, to
            pursue culinary perfection for its customers. Unfortunately,
            these edible offcuts often end up as waste. Approximately           Figure 2: Salmon offcuts.
            20kg  of  meat  offcuts  are  generated  each  month  at  Knots
            Café.                                                The ESI team gathered annual utility and resource
                                                                 consumption through the electrical and water bills from

            offcuts, potentially even repurposing them into animal food
            or other beneficial products.
