The existing K.itchen (right) has been stripped to the walls,
leaving a blank slate for demolition teams to work with.
The emptying process (bottom right) took multiple weeks,
with heavy equipment requiring complex dismantling.
Executive Chef Markus Bestig (below) and his team have
adjusted well to life in their well-appointed (but still very
temporary) kitchen trailer (bottom left). The hollowed-out
shipping container will serve as their home until tl1e
completion of tl1e kitchen extension in June 2025.
