Speedy	Barley	or	Chicken	Noodle	Soup

	

Ingredients	and	Prep:
	
1/2	cup	of	uncooked	pearled	barley	OR	egg	noodles.
1	cup	of	water.
1/2	pound	of	skinless	and	boneless	chicken	breast.
1	sliced	carrot.
1	sliced	stalk	of	celery.
2	10.75-ounce	cans	of	condensed	chicken	broth.
Ground	black	pepper.
	

	

Cooking	Directions:
Cut	the	chicken	into	bite-sized	chunks.
Mix	the	water,	broth,	celery,	carrots	and	chicken	in	saucepan.
Add	the	pepper.
Heat	to	a	boil.
Add	the	noodles.	Stir	well.
If	using	barley,	boil	for	approximately	20	minutes.
Cook	over	medium	heat	for	approximately	10	minutes.	The	noodles	(or
barley)	must	be	soft	and	tender.
	
	
Serving	Instructions,	Tips	&	Variations:	This	recipe	serves	4.
Serve	this	dish	with	a	side	salad.
If	desired,	use	pearled	barley	in	place	of	the	noodles.	This	will	take
approximately	30	minutes	of	additional	prep	time.
